I hope your Thanksgiving was wonderful.
We had a very enjoyable day
with family and good friends.
We had so much fun celebrating Miss H's first Thanksgiving.
Josh, Ali and Miss C spent Thanksgiving with Ali's family this year.
It sounds like they had a wonderful day also.

BUT...
I think my family's favorite part of Thanksgiving is the day after
(or in this case a few days later)
when we have "turkey rolls"
some people call them taquitos, but not our family.

So, how do you make turkey rolls? Let me show you.
First Corn Tortillas
lightly fry the tortillas so that they are soft, set them aside until you are ready to start adding the turkey.
Shred the turkey and season...I use Italian seasoning, garlic and a little salsa.
Place the turkey on the tortilla and roll it tight secure it with a toothpick.
Deep fry until the shell is golden brown.
Let the turkey rolls drain and cool a little.
We like to eat them with guacamole, sour cream and salsa,
add homemade chips and there you have it.
Our favorite turkey meal.

What do you do with your left over turkey or do you have something different for your Thanksgiving meal.

Thankful For...

I am thankful for...
a table full of food.

and for an amazing husband that provides for his family.
I love Kirk so much...I know I rarely talk about him,
but he is my Hero, my companion, and the father of my children.
He is an amazing example of hard work and determination.
I am so thankful for him.
We had THANKSGIVING with ALL of our children, our first grandchild,
Kirk's sister Pennie her husband and our niece, Sydni.
I have been so blessed Josh married a real sweetheart. The more I get to spend time with Ali the more I just adore her. I am grateful that they have chosen to have a family. I did not know it was possible to love more than you do your own child...but being a grandma is beyond amazing.
I love watching Kira and Sergio together,
and can never thank our Father in heaven enough that they are here with us for the holidays
and hopefully much longer.
I adore my Derek, my son with the Heart of a Lion. I am grateful for the good young man he is.

I am grateful Kirk has such a good family. I truly love his brothers and sisters and their children.
I am grateful for my dad my brothers and sister and for "love ya" texts and phone calls.

So, as FALL 2010 comes to a close...
I can only say what an experience it has been...
NOW BRING ON CHRISTMAS!

Happy Thanksgiving!

May your stuffing be tasty,
May your turkey plump,
May your potatoes and gravy Have never a lump.
May your yams be delicious
And your pies take the prize,
And may your Thanksgiving dinner
Stay off your thighs!

Thanksgiving Decor

This was given to me about 10 years ago. I love it! I always look forward to putting it on my table each November.
The details are so pretty.
Such Pretty Eyes

The table setting is perfect even the crust on the bread.
The pets have their own little food bowls too!
This was a thank you gift from the Senior Citizens Center.
