This is the best...wait let me say that again, the BEST!
Fajita recipe...with a couple of my little tweeks.

The recipe comes from the
1988 Idaho Beef Cook Off recipe cards.

Yes, I have keep the little card that long, because it was worth saving.
I doubled the recipe for these pictures, and for dinner and left overs.

1 pound boneless sirloin steak or top round stake, trimmed.
1 large onion
1 large green pepper, seeded and sliced.
3 Tablespoons honey
2 Tablespoons white vinegar
1 1/2 teaspoons garlic powder
1 1/2 teaspoon powdered ginger
1/4 Cup soy sauce
3/4 Cup vegetable oil

Add all the meat and veggies along with your marinade into a big bowl or large zip tight bag.
Let it marinade for several hours or over night.
I follow the recipe except I also add a red and yellow pepper
2 smashed garlic cloves,
 Worshirshire sauce (I don't know how much maybe 2 Tablespoons)
Pepper and Salt.
I also cut the oil back a little
the honey I only add 1 Tablespoon
and I add about 1 Tablespoon Lime Juice
When ready, take the meat and veggies out of the marinade and cook in med to hot skillet.
The original recipes calls for you to cook the meat and then add the veggies.
I like to cook my meat and veggies together.
DO NOT ADD extra marinade from your bowl.
It only takes 10 to 15 mins. for your Fajitas to cook.
When you start your meat, turn your oven to 350*. Wrap tortillas tighly in foil and place them in your warm oven for 10 to  15 mins.

When you are ready to serve, pull out a warm torilla and add your fajita mixture.
I like mine with a little cheese, sour cream, avacado with lime juice and salsa.

Perfect Heart

I had my "annual" heart check-up on Thursday and Friday.
Kira and Hazel were my travel companions.

Thursday was full of lab work, echo, xrays, dex-a-scan plus my clinic visit.
On Friday,
I had my biopsy, right heart catherization, and heart pressure tests.
It was so cool to watch the ink flow through the perfect arteries and viens of my heart.
The picture here doesn't do it justice.
(The 8 shaped wires are the wires that were placed on the sturnum when I had my heart transplant)
Thursday after all the appointments we went to the LDS Church History Museum.
While looking at the many office items of Brigham Young, Miss H was sure that the retangle picture had to be a computer. She "typed" away while Kira and I were looking around.
 We all enjoyed the part that has all the different things from the Latter-day Prophets.

The theme of the compition is “Make Known His Wonderful Works”
There were so many amazing pieces of art.

We went and walked through the children's section.

 at that point of the visit Hazel decided it was nap time.
It might have been a good thing she went to sleep, because we might not have been able to get her to leave all of the hands on things for children to do in this part of the museum

The temple grounds were beautiful as always.
The roses smelled heavenly.

All of my lab results were wonderful!
The doctors were very excited to see my results, almost as excited as I was.

Kira, Hazel and I decided we needed to celebrate with a very yummy dinner.
I had ordered Crab Legs.
Miss H was sure she wanted to try them.

 I thought for sure one taste and she would give it back...
 Nope, SHE LOVED IT!!!
I broke her off a piece and she ate every bit of it!
 Thankgoodness, we NOW know she does not have a shell fish allergy.

Friday, after the Cath Lab the doctors came in and visited and said how happy they were with all of my results and said I could leave to go home and they would call with the biopsy results.
I was really excited that they said I could "GO HOME", usually they tell me I have to stay in the area until the biopsy results come back.
When they called with the results they told me it was the BEST results I have ever had!!!!

2nd Heartaversary!

May 14, 2012
I looked out the kitchen window this morning to see my back yard covered in hearts.
It was an Awesome HEART ATTACK from one of my dear friends, Nancy.
I am not sure how many hearts were out there but there were A LOT!

When checking the mailbox I could not believe all the cards and letters.

I will admit I was in tears as I read the many kind words of so many people that have been such a part of my life.  My sweet Kira had sent a facebook invitation to as many as she could to remind them of my anniversary coming up.
I had no idea and was totally caught off guard to what I found. Very touching.

I really do not like to have my picture taken.
I have never thought of myself as very photogenic.
But, I couldn't stop smiling and wanted pictures of this amazing day
 and all the love that I was feeling.

For dinner we had burgers on the grill.

 and this awesome pasta salad.
don't you love the pasta hearts! I found them at World Market when I was in Arizona.

Josh and Ali changed there plans so that they could come out for the evening.
Celes had a busy day and she was ready for bed early.
I can never find the words to say how much I love having my family close by.
Not only am I celebrating 2 years of this amazing heart.
But, also 2 years of having all of my kids living in the states.
After burgers it was time for
With GIANT marshmallows
and what ever flavor chocolates you wanted
on your graham cracker it was an awesome sticky, gooey,
 not so heart healthy treat.
our nephew David with is amazing wife Jenny came over to drop off a "heart"
and were convinced they needed to stay for smores.

 To close the day off.
Kira and Sergio came out with a
Sky Lantern they found it at Toy Town,
It was BIG and beautiful.
It did not take long for it to be up in the sky and crossing the river.
Before long it was completely out of site.
It was so very pretty.
 With a final deliveries of hearts
hugs and "love ya's"
I could only find a few simple words to express how I felt.
Loved and very special.
Thank you everyone.

Once Upon A Time....

I was a Blogging Fool!
I think about blogging all the time, but that is far as I go...
Lazy I guess...

So, to share what I have been doing this past month...
I have been addicted to helping indexing the 1940 census.

I have spent a lot of time thinking about my mom. Her 70th birthday would have been April 22nd.
On April 25th this was my Facebook Status:
18 years ago at this time I was on my way to Arizona. My Mom had just passed away. I am not sure when the first tears fell...but I know it was later in the day when the reality of what just happen had hit me. My mentor, my hero and my best friend was no longer on this earth...what would I do with out her? How would my 3 small children understand that grandma was gone...the tears flowed freely as not a word was said, just a empty moment. 18 years ago my mom's heart could no longer fight the fight it had been through for 5 years it was tired, and I believe so was my mom.

I miss my heart aches to think of the many times I wished I could just set and talk to her... ask her questions and share her grand children's accomplishments and watch her love on her Great Grand babies...

And as hard as today may be, I am grateful that I had the honor to be her daughter and that I got to call HER..Mom...


Our neighbor's asked if we would watch over their cats while they were out of town.

They had everything the cats would need while they were gone.
Unfortunately, their black kitty broke her leg...let me rephrase that more like SNAPPED her leg.
It was great fun to call my neighbors to tell them and ask what they wanted me to do. If I should have her put to sleep or what...
as you can see she is healthy and very much alive...
and Wenner with her three legs can still out run me,
I have got quite attached to this cat, when I would give her the antibiotic drops she would just lay on her side, and purrrr at me.
I don't know, I am not a cat person...maybe it was cussing me out. heeeheeehee

On a happier note:
Spring arrived!

and I have my two little BUSY girls.
Oh my goodness these two are something else.
I love them soooo much.

So, there...
now you know what I have been doing instead of blogging.
