Potato Soup

When I see the first snow fall, no matter how slight on the cars, then I know that it will he a homemade soup day.

and today it is
Idaho Potato Soup
I add 3 potatoes
Well, if you do not have fresh IDAHO potatoes....
You may have to add about 12 potatoes
bring to a boil with water that covers to potatoes in your pot.
I add:
carrots, celery, white onions, green onions, SALT (you must add salt when cooking potatoes), pepper.
and boil until your potatoes become semi soft.
I then add:
1 quart of half and half and about a 1/2 gal of milk. Turn your heat down and let it simmer..
Oh, YES...I also add a cube of butter. When my soup is warm I slowly stir in a white rue (flour and milk)
until it is the thickness I want it to be.
I like to sprinkle real cheese and extra pepper on my soup and serve with corn bread.
Yep, I am a happy girl.
remember I said it taste wonderful...and I did not mention the calories :O)
