I hope your Thanksgiving was wonderful.
We had a very enjoyable day
with family and good friends.
We had so much fun celebrating Miss H's first Thanksgiving.
Josh, Ali and Miss C spent Thanksgiving with Ali's family this year.
It sounds like they had a wonderful day also.

BUT...
I think my family's favorite part of Thanksgiving is the day after
(or in this case a few days later)
when we have "turkey rolls"
some people call them taquitos, but not our family.

So, how do you make turkey rolls? Let me show you.
First Corn Tortillas
lightly fry the tortillas so that they are soft, set them aside until you are ready to start adding the turkey.
Shred the turkey and season...I use Italian seasoning, garlic and a little salsa.
Place the turkey on the tortilla and roll it tight secure it with a toothpick.
Deep fry until the shell is golden brown.
Let the turkey rolls drain and cool a little.
We like to eat them with guacamole, sour cream and salsa,
add homemade chips and there you have it.
Our favorite turkey meal.

What do you do with your left over turkey or do you have something different for your Thanksgiving meal.

Those taquitos look amazing! I had to make a lasagne tonight because I'm so sick of Thanksgiving leftovers!

Glad everyone had a wonderful Turkey Day. Ours was a really difficult weekend.

We do turkey sandwhiches (bread, mayo, s&p only). My mom will make turkey soup. If there's enough, I do a turkey and stuffing casserole, but usually I just buy some turkey breast meat six months from now to make that, so we're not completely sick of Thanksgiving leftovers when we eat it.

This year we made white chicken chili but used turkey instead. It'll be our go to leftover turkey meal. Yum! We also eat turkey sandwiches and my mom made turkey squares, but I have no idea how she makes them (turkey, cream cheese, and other stuff lol wrapped in crescent roll dough in a square and bake). I'm always up for yummy ideas. Thanks for the turkey roll recipe!
